Because it's yeast, I did some googling, made an educated guess and risked 91°C. It totally payed off — this brew's the best yet.
Smells of super sweet berries. Brings up light smoothness on fruity background.

Turns out I was using grind 19 all these days. I'll keep at it then.. I've also set the water to 93°C today because the beans are anaerobic washed.
This one woody at the core, a little sweet. Some sour notes in the background.
