Pumpkin Soup in a saucepan on the stove top. This is before it’s blended. Lumps of pumpkin, carrots, potatoes and onion. It’s been cooked with coconut cream from a can and vegetable stock. I used fresh Ginger, fresh garlic and ground turmeric, cumin, coriander, black pepper and salt flakes and chilli flakes.
Blended pumpkin soup. It’s a glorious yellow colour. I did roast the pumpkin in chunks in the oven for 25mins. I drizzled them with olive oil and S&P. They nearly didn’t make it into the soup. Yum! Two portions in the fridge and three in the freezer. There! I’ve peaked for a Monday morning!
Pumpkins 🎃 everywhere so why not make soup.
