‪Great focaccia @ 90% hydration. Topped with anchovies, olives, roasted tomatoes and fresh tomatoes. Baked at 220 ºC (425 ºF) for 25 minutes.

Pizza came out great. The poolish added flavor. Since I’m baking in a home oven @ 260 °C / 500 °F adding #EVOO to the dough and using a thick cast iron pizza steel helps with the crust.
