Portuguese chicken. So juicy. A marinade of garlic, paprika and smoked paprika, oregano, garlic, olive oil and vinegar. Roasted over cabbage, red peppers and potatoes. Chicken was spatchcocked. #chemistswhocook.

Eggplant Parmesan is one of those comforting foods. This one I salted, floured and fried the eggplant. Layered it with a zesty tomato sauce, mozzarella, Parmesan, basil and a held it together with an egg and Parmesan mix. Baked for 30 min. #chemistswhocook. #foodsky.
