Note: Sanitizer bucket at bar machine observed empty. — 1) Carton of heavy cream held past manufacturer's best by date of 12/23/24 inside two-door upright cooler near back door. — 2) Two containers of hummus held past manufacturer's best by date of 11/19/24 located inside basement meat walk-in cooler. — No soap available at the handwashing sink located in basement prep area beside ice machine. — Two severely broken and torn rubber spatulas hung with clean utensils above top-loading cooler across from cookline. — Interior shield of ice machine near walk-in coolers in basement soiled with black mold-like residue. — Weather stripping on the back door missing on the bottom of the door. Light is visible through gap below back door and floor. — 1) Blue light bug zapper plug-in installed above single-use beverage lids and straws in front side server station. — 2) Several glue tack pest monitoring boards stored on ledge directly above top loading expo cooler and prep table. — Five deceased cockroaches observed within the facility on glue tack pest monitoring boards located in following areas: 1) Floor below ice machine in basement. 2) Floor below dry food shelves across from walk-in coolers. 3) Floor near furnace in basement prep area. 4) Ledge above expo cooler. Note: No live pests observed throughout facility at time of inspection. Facility is currently working with Orkin Pest Control and last serviced on 02/04/2025 per invoice. Marrow, 283 Hamilton Row During a routine inspection on February 4, an inspector noted several problems at Marrow. — 1) Pimento cheese holding at 52F stored on counter beside top-loading cooler outside of temperature control for 20 minutes per operator. — 2) Cooked sausage holding between 88-91F stored on shelf above flat top grill outside of temperature control for 1.5 hours per operator. — Raw pooled eggs (155F) stored on shelf above ready-to-eat lettuce inside walk-in cooler. — Container of milk (opened 1/22) held past facility seven-day discard date located inside walk-in cooler. — Red wiping cloth bucket stored inside front hand washing sink across from cash register. — Facility observed reduced oxygen packaging to several potentially hazardous food items inside front display cooler: 1) Raw boneless ribeye. 2) Steak. 3) Chuck roast. 4) Pork loin chops. 5) Tenderloin. Facility does not have a HACCP plan for this specialized process. Birmingham Pub, 555 S. Old Woodward, Suite 100 During a routine inspection on Feb. 12, an inspector noted several problems at Birmingham Pub. — Yogurt held past manufacturer's expiration date of 01/19 located inside one-door upright cooler located near cookline. — Y-splitter with shutoff valves installed directly downstream of atmospheric vacuum breaker on upstairs mop sink without a vented T device. — 1) Container of coleslaw (prepped on 01/28) held past facility seven day discard date located inside two-door reach in cooler across from fryers. 2) Eight containers of cut cabbage (prepped 02/05) held past facility seven day discard date located inside upstairs walk-in cooler. — Upstairs bar dish machine measured 0 ppm chlorine. Note: Sanitizer container at the dish machine observed empty. — No paper towel available at the handwashing sink located in-between side prep tables near upstairs walk-in cooler. — Employee observed using handwashing sink to fill up pot with water located beside warewashing area. — Heavily dented can of tomato sauce stored with intact cans on shelves in basement dry storage area. — Handwashing sinks no longer fully sealed to adjoining wall in following areas: 1) Hand sink in dishwashing area. 2) Hand sink at end of cookline near salad top loading cooler. Choco Mania Cafe, 280 E. Merrill St. During a routine inspection on Feb. 6, an inspector noted several problems at Choco Mania Cafe. — Dichlorvos pest strip not used in accordance with the manufacturer's specifications, hung on clean utensil hooks above prep table near oven. — Four cans of whipped cream held past manufacturer's best by date of 12/16/2024 located inside three-door reach-in cooler along front dessert makeline. — 1) Employee observed using front handwashing sink across from cash register to wash utensils. 2) Handwashing sink in back prep area blocked with boxes of chocolate and a bag of towels stored inside hand sink.No quaternary ammonium test strips available to monitor sanitizer for wiping cloth buckets. — Sanitizer concentration of wiping cloth container located below front handwashing sink measured at over 400 ppm quaternary ammonium.Ice cream scoops and utensils stored inside dipper well located across from ice cream cooler. Terra Kitchen & Cocktails, 260 N Old Woodward During a routine inspection on Feb. 11, an inspector noted several problems at Terra Kitchen & Cocktails. — 1) Sanitizer bucket stored on shelf with clean plates and bowls located across from prep table and two-door upright cooler in kitchen. 2) Sterno cans stored on shelf above single-use gloves and cooking oil in back hallway near dry storage room. — 1) Raw ground beef (155F) stored directly beside and above ready-to-eat bread inside drawer cooler along cookline. 2) Raw shell eggs (145F) stored on shelf above ready-to-eat pasteurized carton eggs and facility made sauces inside food walk-in cooler. 3) Raw tuna (145F) stored on speedrack above cooked, ready-to-eat fish and rice inside beer walk-in cooler. 4) Raw chicken (165F) stored above raw calamari and beside ready-to-eat cheese inside two-door reach in cooler across from cookline. — 8 X containers of burrata cheese held past manufacturer's best by date of 02/08/2025 located inside one-door upright cooler in side salad prep area. — 1) Raw chicken observed inside insufficient ice bath beside flat top grill holding between 45F-48F for less than 30 minutes per operator. — 2) Carton of heavy cream holding at 78F stored on counter of top loading cooler outside of temperature control along cookline for one hour per operator. — 3) Dispenser of facility made ranch dressing and fresh garlic with oil sauce holding between 64F-71F on counter of prep table outside of temperature control located across from expo station for less than two hours per operator. — 4) Lemon cream sauce and cooked lamb holding between 88F-101F inside table top steam table across from cookline for less than one hour per operator.
