My first California Roll. No, seriously, this is my first time attempting this. I was hella nervous that I'd screw everything up, waste all the ingredients and have nothing to serve my beloved family... I really need to trust in myself more! I didn't have the proper short-grain rice, so I made due with some Jasmine (Hom Mali) rice. Left it covered a bit too long, but it actually made it stickier, so things worked out. Sushi Vinegar is a ratio of: 8(rice vinegar) + 4(white sugar) + 1(salt) *Whisk together in a small pan on low heat, and never boil it. * You will need 30ml (1oz) sushi vinegar for each rice cooker cup (they're a 180ml cup). * Allow it to fully cool, or even chill it. *Slowly pour the sushi vinegar over the back of the rice paddle (shamoji) to spread it evenly over the rice. The idea is to evenly coat the rice with a light layer of the mixture. I paused part way through, to give the rice a quick flip, before adding the rest. * When blending the sushi vinegar into the rice, I was told to use a fanning motion, or a slicing and folding technique. The trick is to fluff and mix, not squish, chop or break the grains. It's actually a major hassle, but very worth the trouble.

My second California Roll ever. This time, it was a bit loose and portion control wasn't correct. However, it actually held together quite nicely and had a nice balance of imitation crab, avocado and cucumber. I think I'm more a of a traditionalist, preferring a slice of cucumber to the julienned cut, which was recommended to me. My skill level and ingredients are probably a major factor in that conclusion. I'm literally working with a $10 Santoku, that I got at Fred Meyers about a decade ago. So it's not like you need fancy tools, to make yourself a sushi buffet at home. It takes determination and the development of a few skills. Don't go out and spend money, before you've figured out what you can do, with what you've already got. You have to decide what you want in life; what really motivates you; what you feel the need to achieve. Then focus on that dream.
