Here are my basic ingredients. This is not from a recipe, just more of my reckless improvisation!

If you time everything right it won’t be hard to get that (sharp, of course, extra sharp, preferred) cheddar melting immediately.

One little handful of goodness, ready to warm yr wicked soul!

Lunch @ #NiniCocina! Heat chili, adding balsamic beef tips; chopped chives; fiery garlic aïoli; n Vietnamese chili garlic sauce. Toast whole wheat pita bread. Line pita, straight from toaster steaming, w thinly sliced sharp cheddar. As it melts, pour chili into pocket. Top with grated cheese. Boom!
