Selmi Micron Ballmill.

In this we blend sugar, nib, and cacao butter to 17-20 micron.

This is due to the human tongue being able to feel down to 22 micron.

Making chocolate, this is a Selmi Ball miller called the “Micron”

Into it we add sugar, nib and cacao butter.

It slowly mills through the the thousands of Swiss ball bearings till it reaches a median of 17 microns. This can take 45 minutes to an hour and half.

After chocolate nibs, sugar and cocoa butter, are ball milled to between 15-17 microns we run it through a screen that makes sure anything larger is strained out.

The reason we go to that size as the tongue can’t feel bellow 22 microns.
