This is a picture of a spatchcock chicken. Spatchcocking is basically removing the backbone and flattening out the chicken so that it will grill or roast in less time because of the more surface area
The picture is an oval white plate with a chard leg quarter and root vegetables. The skin got a little charred, but it tasted delicious.
