Saute mode and fry off onions Add 1 cup of rice and whatever vegetables you need to use up in whatever quantity works for you. Add 2 cups of liquid, stir well. Switch saute mode off, add lid and close the vent. Manual, high pressure 6 minutes. Quick release, add cheese of choice, stir and leave for 5 minutes. Serve

One of the ways we tackle food waste in this house is allocate Wednesday's dinner as Use Up The Fridge Risotto which we make in the Instant Pot. Whatever vegetables need to be used get made into a tasty dinner.
