A wandering minstrel hoarding stories and pulling them out the bag just when you think the evening is done and dusted. The Teeling Whiskey Co is a relatively young distillery - only founded in 2015 - but the family story stretches back to 1782 when Walter Teeling established a wee craft distillery on Marrowbone Lane in Dublin. As with nearly all of the Irish distilleries found in the late 18th and early 19th centuries, economics of the day did it’s best to consign them to the dustbin of history. John Teeling launched Cooley’s Whiskey Distillery in 1987 which was sold to Beam International in 2012. At this time, Jack & Stephen Teeling negotiated the purchase of 16,000 casks of various aged Cooley Whiskey which helped launch the new Teeling Distillery in 2011 with first bottlings released early 2015. So this beautiful looking 30 YO whisky is probably made up of those beautiful pieces of aged-Cooley history that the Teeling brothers purchased back in 2011. Part history, part resurrection. Teelings 30 YO was distilled in 1991, aged in ex-bourbon casks for around 21 years and then spent the next nine years in ex-Sauternes casks. That’s new. That’s refinement. That’s how you get an old whiskey to sing a new song. One the nose it’s full on orchard fruits, millions of peaches, chocolate hazelnut, with a hint of molasses. Leave it to breathe and notes of tinned pineapple waft through. We’re getting a wee bit tropical here. The palate sings a harmonious tune, balanced peach and apricots, honey syrup, lemon citrus, lemon drizzle cake with just enough of the oak to give it a bit of flame and spice. It’s so well balanced. Astonishing cask management. The finish is a touch spicy, hints of pepper and smoke, warm tropical fruits and a touch of caramelised bacon salt.
