Made four loaves of bread today. Started last night with pre-ferments. Two are honey spelt (top) & two are "rustic", that is, a combination of bread, whole wheat, and rye flours.
The spelt was grown here in the Hudson Valley & milled in a small mill close to my apartment in Brooklyn.

Yesterday I made a 50% bread flour, 25% whole wheat flour, and 25% rye flour loaf with relatively low hydration and it’s really good. Makes great sandwiches. I do think I want to increase the hydration a bit next time.
It’s based on the recipe for lean French bread in Modernist Bread.

I had bakery orders for today so I made an extra guava babka to keep for myself and my family. I made them with fresh yeast, which is such a treat. IMO, it adds a little something that dry yeast just can’t.
