With their help, we can convey the character and emotion of the character (remember how it is written in the guides for animators that rounded objects and characters seem less aggressive than something with sharp corners?). You can deviate from the main reference if you draw in a cartoon/near-cartoon style, you are limited only by your imagination, but do not forget that your image must be recognizable. Use references (and break down what you want to draw into simple shapes) and it will make your life easier! :D
