Taco de Suadero with a fried salsa de chiles, mulato, puya & morita with charred tomatillos, we call it salsa taquera. The meat is extremely tender, and its taste so unique, due to the fact that it is cooked in lard.
There’s 3 important groups of (cult-like) Taco devotees, in Mexico City: one worships Tacos Al Pastor, a second one, Tacos de Carnitas, & the last one, Tacos de Suadero… tonight we honored Suadero! @milagrocantina.bsky.social
