Homemade gravlax sitting on top of a pale coloured wooden board. The cured side of sockeye salmon is in one piece, before being sliced. It is deep salmon pink in colour, and the surface is lightly peppered with the crushed white peppercorns and allspice which were used in the curing process.
Homecured gravlax in a rectangular Pyrex dish at the end of the 36-hour curing. It is almost completely covered with bright green sprigs of dill, the deep salmon pink of the cured fish underneath is just visible in a couple of places.
Side view through the Pyrex dish. The deep salmon coloured, homemade gravlax is immersed in the liquid produced during curing, underneath and on top of the salmon the bright green of the dill can be seen.
Homemade gravlax. I used the middle part of a side of sockeye salmon, curing it for 36 hours with lots of fresh dill.
