Entry 12- The danishes that I had frozen turned out wonderfully! They had the texture of a Day 2 danish and the taste of a fresh danish! I’m glad to know we can freeze some since one batch makes 24 danishes!

Entry 11- I froze these danishes the other day since my brother is coming over today to watch hockey and share a danish.
I’ve been meaning to freeze a few to see how the taste and texture are after freezing and thawing. I hope they’re yummy!

Entry 10- Here they are!!!!! These danishes are an 8-hour project. I love spending an evening making the compote and a day making the danishes, with many rests throughout the day. This is the prettiest batch yet.

Entry 9- I always like to bake up the scraps. They are delicious and must be wasted! Look at the layers!

If I can, I always use organic fruit for baking because it tastes so good.

Entry 8- Wow wow wow! Today’s laminated dough is evidence that the more you practice something, the better at you it you get!
This is the best laminated dough I’ve ever made! I only had one bit of butter peel out, no tears, a nice shape!

Entry 7- The cream cheese mixture with lemon zest, egg yolk, powdered sugar and vanilla paste is prepared and in the piping bag.
The blueberry compote has been strained! The leftover juice will be excellent in cocktails or over ice cream!

Entry 6- We got home from Juniper’s nail trim 1 minute before the dough was ready to be de-gassed. Excellent timing.
I love encasing the butter block.
This is the most symmetrical set of folds I have ever done for laminated dough! Yippee!!

Entry 5- The butte block is ready! I like to cut the sticks in half and roll it out rather than cubing it and thwacking it and rolling it out. It’s a more serene experience and less effort!

Entry 3- I put both granulated sugar and powdered sugar in the compote. The powdered sugar was for the cream cheese. From Entry 1 you can see how many notes I’ve had to add to the original recipe (she updated it over time.). 1 more note added.
