I give this crumb an 8/10. Semi-open with a little bit of tunneling, it just didn’t rise as much as I hoped.

Today’s loaf. 72% hydration, 15% whole wheat, water sprinkled crust, slow yeast proof. First proof was about 6 hours. A FWSY type thing, autolysing, folding, pinching, Dutch oven, and generally a royal pain in the tuchus. Hadn’t done one in years, so why not? I’ll wait again. 🤣🤣
