A couple bottles we tried from JSBrewery. The spot brewing Makgeolli (Korean Rice Wine). $30 a 12oz bottle, but really good.

I can tell because the separation layer is almost at the top. A slight liquid layer is beginning to form on top of the rice. And the sound of the bubbling has slowed down quite a bit.

First stage: Juk - 400g glutinous rice flour, 1800ml water Sugok Ferment 3 days, storing twice daily. Filter before adding to stage 2. Second stage: 1300g godubap (steamed glutinous rice), 800ml water Mix with first stage, ferment 3 days Third stage: 1300g godubap Add to jar and mix. Ferment 2 to 3 weeks.
Bought a 10 liter jar a couple of weeks ago, but I can only steam a little more than 1kg of rice at a time (enough for 3 liters wonju).
Solution: My first 삼양주.
(Samyangju, 3 stage fermentation)

Bottle of homebrew makgeolli diluted with hibiscus tea instead of water. The clear portion is some mix of purple and crimson. The sediment looks more lavender pink.
The makgeolli has been mixed and served into two small 4 oz classes.
Opened the hibiscus makgeolli.
Color: amazing
Taste: slightly more sour than regular makgeolli. Slightly fruity/Floral.
Would do again. Especially since it can be done with a single bottle from any regular batch.

A jar of homebrew makgeolli made with a mix of white and black rice. It's very purple from the high ratio of black rice rice used. Also the water from soaking the black rice was added.

Stage 2: 50% black rice and black rice water.
It's deep deep purple. Maybe I'll do 2:1 black rice to white rice next time?

오늘은 눈이 살포시 내리는 날씨라 하늘을 보고 있자니 막걸리에 전이 생각났다. 평상시야 비오는 날 생각나겠지만 겨울의 비는 눈 아니겠는가?!
모둠전에 두부김치를 주문하고 편의점에서 지평막걸리만 구입하려 했는데.. 일단 난 단맛을 그닥 선호하지 않는다는 점과 도수가 너무 낮은 느낌에 소주도 추가 구매하고 소맥도 분명 땡길것 같아 구입. 막소맥으로 달리!!
기대 이상으로 어마어마한 양에 먹고 나서도 두세끼 밥반찬으로 문제없을듯

It's been a while since I had an #Insidious stick from Asylum. They were my absolute FAVORITE go-to for a very long time but for some reason I just haven't kept any in my humidor. I do really need to stock up again when the cold weather passes. A good #cigar and #makgeolli is a win ❤️
