I used sliced potatoes instead of shortcrust. I found this style quiche on multiple websites, so I wanted to try it.

Veggie and feta quiche baked with an herbed mashed potato crust cooking on a wire rack over a wooden cutting board.

“Use a tart pan” goes under some of the worst ideas I’ve ever had. Guaranteed forearm burn EVERY time but at least this one didn’t end up on the floor! Smells amazing. Hopefully it will taste even better.
