Hearty Vegan Stew 🍲 🌱 Ⓥ
Brown Ⓥ sausage, sauté onion, garlic, celery, carrots. Stir in tomato paste, thyme, tomatoes, red wine. Add potatoes, mushrooms, peas, stock, soy sauce; simmer 25–30 min. Blend a small portion & return to pot, garnish and serve.

Everything worked out fine and I managed to get it ready in just under 1 hour! (recipe says 45 min.)
Paired well with the Chablis!
