White Asparagus Soup
This is a very delicate soup. Peel the skin from the middle of asparaguses and cut off the bottom 1 to 2 inches. You need about 20 asparagus for 2 people.

I found white asparagus at a supermarket. A bit earlier than last year? Anyway, I couldn’t hesitate to get some. White asparagus has very delicate flavor, so the sauce should be very mild. 1/

White Asparagus with Boiled Egg Hollandaise Sauce
Hollandaise sauce is made with raw egg yolk, but I used boiled eggs instead, egg yolk for the sauce and egg white for topping. I didn’t add butter, either.

White Asparagus with Lemon Butter Sauce
White asparagus would be better to cook well in chicken or vegetable broth. The remained broth after cooking asparagus is used to make sauce with salted butter and lemon juice.
