Is it a melon? No! Is it a courgette? Not really, but it is a summer squash. It’s a ‘sharks fin melon gourd’ and you eat it like a courgette. This one is 2kg - we cannot eat them fast enough!

Heat up a deep large pan, pour the oil in. Once hot, pour the minced vegetable mixture in, add salt, sugar, black pepper. Mix.
Bring to a low boil. Cover, cook for ~ 40 mins, mixing from time to time.
Add vinegar. Cook for 10 min more.

Cut baked vegetables into slices, process using *meat grinder*.

Wrap zucchini, garlic and onion (chopped in 1/4s) in foil, bake them for 30 - 35 mins.
