Cool! Our next door neighbor at the distillery is a local brewery (with a taproom). Process is fascinating to me, as well - I’m in the middle of figuring out sourcing for botanicals for an amaro - and grain-to-glass is a thing.
Small craft distillery in Oregon (Hillsboro, near PDX). Current releases are a PNW-style (citrus/floral-forward) gin, and a 10 yr Rye blend. A Navy gin, single malt program, and more blends/finishes to follow shortly, and brandies, an absinthe, and other are in the mix…
I’m in the craft spirits business, and I absolutely don’t want to push someone to drink. If you drink, cool. If you don’t, equally cool. (well, ok, I may push water on you and remind you to stay hydrated). If you’re in my tasting room, and tell me not to pour a sample for you, I won’t push.
If you’re going to get in ICE’s face, say, “this guy? I’ve known him for years, he’s definitely a citizen, come on, move on.”
