All text for both images copied here. Thanksgiving Soup For using up leftovers from traditional Southern Thanksgiving meal. Details flexible. Pressure cooker: 1 turkey carcass cooked in max water in a full size pressure cooker 2hr on high with ACV and savory seasonings (bay leaf, sage, celery seed, oregano/thyme/etc, black peppercorns, aromatic veg scraps) Dutch oven round 1: Medium-low heat with butter, bacon grease, and leftover cornbread stuffing cooked ~40min or until dark, stirring occasionally. Then season with a head of chopped garlic, sage, oregano, celery seed, salt, etc and stir often until round 2 is ready… Prep as broth finishes: -Pull turkey meat -Cube a large sweet potato -Take finished broth out, strain, and combine with leftover mashed potatoes/gravy/stuffing. Immersion blend it up. -Chop one onion -Cube a bunch of celery -Chop up collard greens Skillet round 1 & 2: -Caramelize onion in bacon grease -Toast farro grain in bacon grease Dutch oven round 2: -Add the stock blend, farro, and sweet potatoes. Add salt. Bring to a boil and cook medium-high for ~45 mins or until farro grains are softened but still pop, stirring occasionally and scraping bottom. -Add pulled turkey, celery, and cooked greens. -Simmer for 5-10 mins, stirring often. Done!
