...a wine barrel, Sherry barrel, etc. As an example, the Glen Breton distillery in Nova Scotia makes a whiskey finished in ice wine barrels (also from a Nova Scotia winery). I have some of this whiskey and the ice wine barrel adds intriguing flavors to the whiskey, including some sweetness.
Generally, a few whiskey producers sometimes use barrels which once were used to age ice wine. The whiskey is first aged for a number of years in normal barrels, and then the aging is finished, for a much shorter time, in different barrels, such as ice wine barrels, but it could also be a.....

I just learned about it the other day. And none of the newspapers ever provided an explanation.

I was drinking Barbera
This week, easily the best dish I enjoyed was from Il Ponte in Woburn, one of my Top 5 Favorite Restaurants. Homemade pasta, topped by a creamy black truffle sauce and topped by freshly shaved white truffles. Decadently delicious with the rich umami of the truffles. A work of beauty & great taste.
