My favorite way to look at it is that it flips right and left because we use our feet to turn in front of the mirror.
If you start with the mirror behind you and casually do a german suplex to face it, up and down are now flipped instead.

How do you go from the first image (Unreal) to the others (Planet Coaster, Cities Skyline)? I'll try to give good answers using only visual examples and without delving into the math behind it.
There is surprisingly little information on using splines to make tools for building curved roads, roller coasters, or in my case ski runs, that are simple and intuitive.
There's a huge gap between how they are used for full flexibility in editor viewports and what we can do for player interfaces.
I'm experimenting with using #unity to make animation to illustrate some ideas about splines. Here you can see the influence of tangent length on the curve.
Rendering is done with @freya.bsky.social's Shapes plugin. I highly recommend you check it out on the asset store.
