Vegan Tantanmen Ramen | Vegan Creamy Ramen Recipe For this week's video, I'l be showing you how to make a delicious creamy tantanmen ramen. It's an easy recipe that takes a little patience and lots of love! Hope you all enjoy! This recipe serves 2 Ingredients Broth 4 dried almond mushrooms 4 dried button mushrooms 2 dried shittake mushrooms 1 piece of kombu, 15g 2 cups water 1 1/2 cups oat milk Toppings Corn 1 tsp vegetable oil 1/2 cup of corn kernel salt white pepper Mushrooms Mince 1 tbsp vegetable oil 1 clove garlic, minced 1/2 inch ginger, minced 5 tbsp textured soy protein 1 tsp soy sauce 1/4 tsp dark soy sauce per bowl: 1 1/2 tbsp toasted sesame paste 1 tsp chili oil 1/2 tsp sesame oil 1 1/2 tbsp soy sauce 1 stalk of bok choy 1 servings of ramen noodles Instructions 1. Bring 2 cups of water to a boil. Add in dried kombu and dried mushrooms. Let it simmer for 3 minutes then remove the kombu when its soft and has expanded in size. 2. Let mushrooms simmer for another 3 minutes then remove them. Set aside for later. 3. Pour the oat milk into the mushroom broth and set aside. 4. In a wok, heat up 1 tsp of vegetable oil. Once hot, add in the corn kernels. Season with salt and white pepper. 5. Saute the corn on medium high heat till it turns to a more vibrant yellow colour and has a bit of a char. Remove from wok and set aside. 6. Heat 1 teaspoon of vegetable oil in a wok. Once hot, add in minced ginger and saute for 3 minutes on medium low heat. 7. Once it starts to brown, add in minced garlic. Saute for 1-2 minutes. 8. Add in the minced mushrooms, saute for 2-3 minutes until its dry and fragrant. 9. Add in the textured soy protein. Saute for 2-3 minutes. 10. Season the mince with soy sauce and dark soy sauce. 11. In each ramen bowl mix together the sesame paste, chili oil, sesame oil, soy sauce into a smooth and creamy paste. 12. In a pot , bring water to a boil. Blanch the bok choy for 2-3 minutes until it turns vibrant. Remove for the water. 13. In the same boiling water, boil the ramen noodles. 14. Pour your oatmilk broth into your bowl. Mix sesame sauce and broth together. 15. Add in your ramen noodles and assemble with your toppings and bok choy. 16. Lastly garnish with green onions and chili flakes. 17. Serve immediately!
