Hey Andy, better buy pre-bonsai material from a nursery, which has grown already for a few years. Deshojo is the maple you want to have. If you grow it from seed you will need 30-40 years for a great bonsai. My 15 y.o. jap. crabapple bonsai and my 12 y.o. deshojo (from 6 weeks ago) for reference.

A Bonsai, incidentally a Ficus bbbenjamina, a bit over 6 years old now:

A 3 level display of bonsai. Bottom is lavender bonsai in a reddish earth coloured pot with moss and rock landscape. Middle is cottoneaster with moss covered soil surface the moss is blue green. Top is Mānuka bonsai in a dark earth coloured pot with moss covered soil surface and the moss is very bright green.

Now with moss applied to all three #Bonsai had a try at how they now look in a shohin like display.
They do sand out a bit better.
