Making potato wedges, or anything that you want to evenly cover in oil: forget using a plastic bag, put it all in a box, put the lid on and give a good shuggle. Oh, and if you want to dry your potatoes off, before adding the oil, just shake the box around with a couple of sheets of kitchen roll.
