Scallops with a cream and anise liqueur sauce. Seafood isn’t my favorite, which is a polite way of saying i think it’s kinda gross. But this is what i was assigned for today’s class and i cant just cook foods that I myself like.
Also, we decided to replace the bacon with beef bacon, because halal.
The texture is flaky from the coconut flakes but firm thanks to the syrup giving it constitution. It was just sweet enough to keep from being to overwhelming, and the coconut blended perfectly with the lemon

Today’s dish: Indian vegetable curry stewed in coconut milk. It would be vegan if i didn’t use clarified butter to cook the onion-ginger paste. Also, i had to substitute a lot of the ingredients from the recipe, like almost half of them. #cooking #Indian #curry #cook #chef #dohashtagsevenwork
Sauteed chicken under chicken veloute, a meaty sauce slightly thickened with roux. Served with cheesy risotto rice and slow-simmered carrot slices. To drink, a dry red wine in a marble cup.
Throwback to that one time i made perfect chicken veloute.
Deep frying is not a moist-heat cooking method. It makes sense but it doesn’t make sense, if that makes sense.

On of my favorite platings, poached and stuffed chicken with cornflake crust, served over bacon matignon. I love the way the gaufrette flowers out from the center of the dish. 🍽️
