I know a (hearing) guy whose parents were both Deaf. He says he thinks in Auslan, because it was the language he learned first and still uses most.

Blow your 11yo's mind by telling them that some people don't think in language at all. Some think in pictures, connections and networks, shapes and textures, or with even more abstract concepts.

But if a deaf person thinks in language, and sign is their main language, then yes.
