THE BEST “soft white loaf” you have ever tasted. slightly sweet.

PERFECT for french toast.

Ingredients 

Bread Flour
Yeast
sugar
salt
water



2.5 cups warm water ( 110f),
1 cup Sugar.

Mix, then add

2 1/4 TBLSPN Yeast

wait till rises to a “creamy Foam” ( 10 minutes or so), then add …

2 1/4 teaspoon salt
3 oz oil

Mix, then slowly add cup by cup 

9 cups of bread flour ( 1450 grams) by hand or with a dough hook.

Towards the end, add half a cup of water to get dry flour off the side of the bowl.

Knead dough until smooth, then turn into a warm, oiled, covered bowl, turn the dough to cover, put in a warm spot or proofing box, let double in bulk.

Punch down the dough, turn it onto a floured board, knead for a few minutes, then place into three well oiled 9x5 loaf pans, return to proofing box for 30 minutes or so until it rises to 1 inch above top of pan.

Bake for 30 minutes at 350 … internal temp of 200f

( my proofing box is a terrarium mat set to 85f, with a large plastic sub inverted over it).
