Since eggs are expensive right now, what's a good substitute binding agent for baking needs? Especially if it's savory?

Well, Paul and Prue wouldn't be impressed #GBBO, but my messy-looking raspberry éclairs should still taste good. Wish I knew why my éclairs always fall. I follow the instructions on the different recipes I've used.
