It’ll be #MarchToThePub before we know it.
It's still #Canuary and Pears are on the list today.
I've been watching a bunch of #canuary videos on YouTube. One of the things that I love about this year's group of presenters is they are real people. Their videos are more about sharing a skill that they love than selling something (e.g. a lifestyle, kitchen decor, products).
Bravo! This is how I feel after I pressure can something for the pantry. Speaking of which, it's #Canuary and I haven't done anything this year.
6.30 am - time to shake a leg!!!
Hammering down sleet today so don’t think a hour or so in the garden is going to happen before lunch.
Got some red cabbage to deal with so that’s my #canuary goal for today
And setting the dehydrator off with another batch of carrots would be great!

800g blueberries, tbsp thyme, juice and zest from 2 lemons, 160g sugar in a stainless steel pot on an induction hob
Frozen blueberries being turned into blueberry lemon thyme jam here on the Croft this morning.
I defrosted an iced over freezer this week - this fruit is being repurposed from there!
Hoping for three lovely jars in about 30 minutes!

Got a hospital day with one of the differently abled ones in my house today - an MRI for cardio issues.
So I am up early chopping some waste mushrooms to go into the dehydrator so that I can fill a jar for today’s #canuary

Was organised last night to get day 7 #canuary sorted!
2 bags of slightly soft lemons - sliced and into the dehydrator overnight to make a jar of lemon slices that are perfect for me to add to a pot of tea!
I can remember the days when lemons were a luxury so it’s nice not to have to waste any.
Two bowls - one with brown shallot skins and one with golf ball sized, blush pink peeled shallots
Two one litre jars and one 750ml jars of slightly pink shallots in a vinegar brine with floating spices
More shallots that went unclaimed - so made proper old-fashioned “chip shop” sized pickled onions!!
Peeled raw onions squashed into a jar and then a hot spiced brine is poured over to completely submerge the onions.
Lid on for a month or so and they will be done

Lovely - but my challenge is to put something into my pantry every day in January … but I will save the recipe xx #canuary

Balsamic pickled shallots!
Smells lovely - fruity and warm rather than vinegary and sharp.
These are cooked pickled shallots so need only 24 hours of so to be ready to eat.
Day five of #canuary is done!!!

Canuary continues — a couple of nights ago a few bags of shallots were unclaimed from the charity waste collection.
So I am guessing today’s task is going to be some Balsamic pickled onions!!
Waste not want not - and they are delicious of course!

Bit intense for a Sunday morning with all the fine slicing and hot vinegar - but Day four of #canuary is done!!!
Lots of milk leftover from last nights Charity waste collection. It’s out of date now so I can’t legally give it away but I can make fresh cheese from some of it & repurpose it that way!!
So today will be a cheese making day!
But first - a quick jar of pickled Thai chillis for #canuary day 4!

Today I canned 13 cans of ham stock from a random ham hock that was lurking in the freezer.
Only a few have scraps of ham in them - but every jar is full of lovely smoky stock for soups and beans in a really convenient form.
So day three of #canuary is in the jar (literally) LOL

I have been challenged to can something every day in Jan- don’t know how practical that is going to be cos we are also doing a pantry challenge where we are eating from our stores!
Today a quick red pepper and onion pickle from veggies in the bottom of my fridge. Cooling now!

10 jars of spicy Salsa Verde are done! This is mixed with grilled tomatillos, yellow pear cherry tomatoes, onion, jalapeno, small peppers, touch of lemon juice, and smoked salt. Delicious! #themistymushroom #canning #homesteading #canuary #wecandoit #growyourownfood
