Entry 9- Baking Adventure number 12 of 18 for 2026 is done! I assembled a mini-croquembouche because the caramel cooled too fast. With a few sugar burns, I decided to call it good.

Entry 8- I’m glad I made a big sticky note to remind me of the half batch! When making the pastry cream, initially I forgot to do half vanilla and salt! I hadn’t even heated it yet so it was an easy fix.

For my first time making both, I’m very proud of myself! Some of the cream puffs are flat but many are beautifully domed!

I have made pâte à choux (or a similar dough) for churros and Roman style gnocchi before but I have never made it for cream puffs!

While they bake and cool, I make pastry cream! Hmm. Plain vanilla or peanut butter?? 🤔

I found a quick way to soften butter perfectly! Boil some water, pour it out (for tea!), put the butter in the empty pot for a little sauna time.
