Making a batch of Rose petal jam 

🌹 emptied my tin of dried roses which I generally use for making rose beads.... 
I added a handful of rose geranium leaves from the greenhouse ... (and yes, they are grown organically, & both rose petals and scented geranium are delightfully edible)! 

🌹 ground some dried Jackfruit for part of the sweetening, and will use organic sugar and a bit of honey for the balance.  

🌹 weighed the dried petals before and after rinsing and then pouring boiling water over them, & let steep for 5 minutes; then strained, and added about a Tbsp of fresh lemon juice. 

Similar to making rose beads, a YouTube video suggested something, then resting for several hours, and simmering again! 

Rose petals contain a good among of pectin, which is wonderful for hydration! 🌹 

In their book on optimal hydration 'Quench,' Dana Cohen and Gina Bria wrote, "ancient Persian doctors used rose petal jam especially for the elderly, slipping it under their tongues to release both the high-pectin hydration and the medical effects locked within, in the gentlest possible release. Rose jelly was especially noted to heal mucous membranes, which line our digestive tracts." ( p 142)

A healer from Belize recommended using a bit of powered rose petals to staunch a nose bleed - I've used it for years, and it works beautifully! 

I wonder if a forgotten use of rose petal beads was a way to store the 'petal power' so they could be rehydrated for medicinal use? ... drying and making pastilles or pellets is used with other herbs ...

I'm excited to add rose petal jam to my 'Quench' Apothecary, and to try it in my 'Afternoon Delight' along with elderberry syrup i made last fall. 

I look forward to our roses blooming.
