I don’t often make sheetpan dinners but maybe I should change that. Chicken leg pieces with za’atar, olive oil, lemon slices, onion, and garlic. Roasted at 425°F for 45 minutes, with chickpeas added for the last 15. It was delightful.

Hutspot is a classic Dutch mashed potato dish. Boil equal parts potatoes, carrots, onions, and parsnips, and mash it all together with a good helping of butter and black pepper. Serve with gravy, and an equally traditional Dutch meatball.

For all intents and purposes this should have been a fantastic dish, and it was, except the “sweet” shishito peppers I got turned out to be some kind of otherworldly fiery specimens. So I saved them and turned them into a spicy salsa for another time.

I had some leftover bacon that needed to be cooked. Added green onions, bean sprouts, a big spoonful of ssamjang, and folded it into an omelet. Definitely a flavor combo I would recommend and one that I’ll come back to.

The title says it all. Dill and pesto are a lovely combination. Together with the vegetables they made for a nice bright flavor. The tuna was folded in towards the end. Add a dash of lemon and maybe some capers for a hint of acid.

A simple salmon teriyaki dinner made from what I had on hand. Pan-seared salmon (from the Lidl, great stuff), brushed with Kikkoman teriyaki sauce, with a side of Korean-style beansprouts and scallion salad, and air-fried shishito peppers.

A super simple supper that came together in minutes. Stir fried “Chinese broccoli tips” and stir fried diced chicken, seasoned with one heaping teaspoon each of Szechuan fermented bean paste, ginger-garlic paste, and sambal, and chicken stock.

We’re visiting Pittsburgh and Fiori’s Pizzaria on the South Side came highly recommended. It did not disappoint us Jersey pizza snobs. Good crust, good sauce, just the right amount of cheese. And a delightful old school ambience.

Last night’s supper.
Mantı are tiny beef dumplings from Türkiye, boiled and lightly fried in butter. Topped with a yogurt sauce (with garlic, mint, and parsley) and red pepper flakes in melted butter. A simple house salad on the side.

I love this dish, I order it a lot at the Little Ferry H-Mart foodcourt. Their version is made with pork, but I like making it with seitan. Stirring in an overeasy egg is a must for me. Leave it out if you want it vegan.
