Pulled and added to puréed cooking liquid
2 1/2# pork shoulder, rolling butterfly. Layered with last summer's roasted Hatch chiles, onion, garlic, tomatoes, cumin, paprika paste, s&p, rolled back up, tied and braised in the oven at 225°F for 4 1/2 hours. Pulled apart, puréed the liquid, served over rice.
