#keevewatch Hi all, been a while but thought I'd give it a try, and I've inadvertently managed to nearly drink a whole bottle. It's come out medium dry (1.003fg) with a lovely effervescence. Nice toffee hit with a light acidity. Now time to design some labels!

#Keevewatch is back!
I'm not sure it's worked. 1.002 on hydrometer, still working a bit. Tastes nice though. I'm bottling in 750ml Champagne bottles and at the worst we'll have a lovely petnat.

#Keevewatch Final decanting of keeved juice. So, part 1 seems to have been successful. Part 2 is for fermentation to go slowly and cease at some point. We have 120 litres of now-fermenting juice.
I must admit to being a bit excited.

#Keevewatch day 8. The outside keeve now has a chapeau brun. I'm leaving it for a bit to see changes throughout the day. It's about 5 degrees outside.

#Keevewatch the outside keeve is now like this. Looks a bit like the inside did two days ago, so the lees could fly today! I'll keep watching and report back.

#keevewatch The keeve is now fully separated. Can't wait to see what fermentation is like. Going to cool down from tomorrow so slowly slowly.

Away from #Keevewatch, we're back at the Piece Hall in The Fax slinging our fabulous mulled cider. Tell yourself it's not raining and cone and say "Hi"

#KeeveWatch. Day 6 continued. Collected about 80 litres of juice. Still 40 litres in tank but started to go a bit cloudy. Left to see if it'll keeve a little bit more.
