It’s the only time a shot like this is used in the episode, and it works because it’s right at the start of the characters (and us) knowing something unsettling is going on . . . but not yet beginning to grasp quite what.

Off-kilter angles of the white doorframes suggest something even weirder than a beam divides the shot.
Kate walking 'out' of the middle and 'into' the right is a ‘wait what?’ moment; Shawn repeating it makes clear we're seeing 2 doorways at 90° to each other.
#Monsterland ep five "Plainfield, IL" shows several years of a relationship between Kate (Taylor Schilling) and Shawn (Roberta Colindrez).
This shot comes soon after Shawn sees something disturbing, and Kate begins acting strangely. 1/3

Finally, the shots play quite different in the details; in the flash moment the lighting is slightly warmer, Toni has no cigarette, and her expression is completely different.

The flash moment (0:28) cuts from Toni to Toni - if it cut from the customer, we might think Toni jumped up from the table; this way it's immediately clear the cut is 'breaking' their conversation. Cutting back to Toni further reinforces this is *her* mind flash.

As Toni talks to a customer (Jonathan Tucker), the scene clearly establishes their positions on either side of the diner table, staying within similar shots, Toni always Frame Left, customer always Frame Right.
This scene from #Monsterland 1.01 "Port Fourchon, Louisiana" uses multiple techniques to make sure the 'flash moment' is viewed as what it is; a visual representation of what Toni (Kaitlyn Dever) is thinking, a fantasy.
