A common trend in this project is going to be excellent OP's tarnished by lazy credits. #Moribito, a show regularly in my top 10 of all time, is sadly one of them. I HIGHLY recommend the show itself. It has one of the best female main characters in anime.

Without question, the complete Moribito series by Nahoko Uehashi. Only the first two books have been translated and published outside of Japan. The anime adaptation of book one is among my favorite stories ever, and book two is another favorite of mine.
