Happy belated #PieDay - just put this apple pie in the oven. ๐Ÿ˜‹

A friend send me a french recipe a while ago, and it was simple enough - I only had to buy the apples and flour, the rest was already in my pantry.

I prefer folding them while sitting, and since my kitchen is way too small for a proper table to sit at, I do it on my bed, which is my main sitting area anyway. The dumplings are pretty tasty btw.

Made veggie dumplings over the last couple of days - 2 batches of 30 dumplings each. (shown is batch one)

As my freezer compartment in my fridge is too small to properly freeze all of them, I froze about half of each batch and ate the other. ๐Ÿ˜‹

First of all, my mum did judge me for not having a 5L cooking pot, so we will make do with my 2L dutch pot.

Now, Step One: Let the soaked beans and a finely minced onion simmer for an hour in veggie stock broth.

A baking pan with 8 holes (for mini cakes). 6 of those holes are filled with the Korean Egg Bread mix, each topped with an egg, bacon cubes, bell pepper stripes, buffalo mozzarella shreds and dried parsley. Can't wait to taste them!

I miscalculated the amount of filling for the dumpling wrappers I had in my freezer, so bought some more wrappers - ended up with another 24 dumplings, of which half will be flash frozen and the rest eaten for dinner

(The filling is from the Dungeon Meshi Cookbook Zine btw)
