This is a molded gelatin salad presented on an oval, light-yellow plate, against a light-grey background. The salad, molded in a loaf pan, is clear, holding a mixture of finely chopped cabbage, chopped green pepper, and chopped red pimiento.
This is "Perfection Salad", which I made following the 1904 prize-winning recipe of Mrs. John E. Cook.
NB: This is not a sweet molded salad. It is cool and refreshing, tasting like a summer salad in a light vinaigrette dressing.
