It’s #NationalTofuDay
So I’m just going to throw the cat among the pigeons and post these lovely photos of Burmese/Shan tofu (တိုဟူး) which is made from chickpeas/split peas rather than soya beans 😁
All the recipes are in my book Mandalay!

Here’s Shan Htamin Chin (Shan Sour Rice) ❤️
Hot rice kneaded with tomato, tamarind, potato and/or fish, drizzled with garlic oil and garnished with crunchy titbits.
Served with Shan Pickle (Mohn-nyin Chin) and fried leek roots and peanuts.

Sunday lunch of Shan Khao Swè (Shan Noodles) with Tohu Kyaw (Chickpea Tofu Fritters) on the side.
The kids had theirs without chilli or the “green stuff” 🙄 but with extra fritters!
Recipes for both in my book MANDALAY.

Shan Khao Swè (Shan Noodles) with some Tohu Kyaw (Chickpea Tofu Fritters) on the side, made with the rest of that tofu 😁

Made Shan Khao Swè with Tohu Pyawt (Shan noodles with soft Shan tofu) - for my brother and his family.
Always a bit confusing to cook in someone else’s kitchen, but I think I pulled it off! 😄
