A bowl of broth topped with pork meatballs, shredded Chinese leaf, coriander, spring onions, crispy garlic, crispy onions, chilli oil. You can’t actually see the rice noodles as the bowl is so full, but you can see a line drawing of a little yellow bird peeking out of the broth (part of the bowl’s decoration!) and some chopsticks balanced on the side.

Kyay Oh is a Sino-Burmese dish comprising rice vermicelli soup heaving with a mix of eg pork, meatballs, Chinese leaf, tofu, crispy garlic, quail eggs and more - the choice is yours rather like customising the Vietnamese dish Phở 🍲

I’m carrying a large, round lacquerware tray filled with crispy Burmese fritters that I’ve just made - clockwise from top, we have gourd fritters (Buthi Kyaw), chickpea tofu fritters (Tohu Kyaw), and Mandalay-style kidney bean fritters (Mandalay Pè Kyaw). All fritters from my book MANDALAY: Recipes & Tales from a Burmese Kitchen, and these ones all happen to be vegan too.
