The sweet, chewy confection known alternatively as "Dolly Bars," "Hello Dolly Bars," and "Magic Bars" is so easy with so few requirements, that calling this a recipe is dramatic. Here's what you need for a 9×9 inch baking pan: 1. Dry cookie crumbs (no Oreos, sorry), 1½ - 1¾ cups. Graham crackers are the usual, but ginger snaps, chocolate or lemon wafers, all just fine! (Hey! Oreos ARE okay if you scrape the icing off!) 2. Butter, ½ - ¾ cup, melted. I use unsalted, for medical reasons 3. Baking chips, a good handful. Any flavor will do – chocolate, of course, but caramel, butterscotch, strawberry, white chocolate... or mix and match. 4. Unsweetened shredded coconut, a good handful. Unsweetened because, well, see #6. 5. Nuts, crushed or slivered, a good handful. I like almonds. Or pecans. Or macadamia nuts... or mixed nuts, or peanuts... 6. Dried fruit, larger types like pineapple or mango chopped into bite-size pieces smaller fruits like cherries or raisins as is, a good handful. This is not usually found in Dolly Bar recipes, but I like the tartness and chewiness of, say, cherries. Tart is good, because the most important ingredient, the one that makes these bars "magic," is: 7. Sweetened condensed milk, 1 14½-ounce can. This stuff is VERY sweet. Keep that in mind as you choose your other ingredients. Preheat oven to 325⁰F Line your pan with foil and give it a coating of cooking spray. Mix the butter with the cookie crumbs, until wet and coherent. Press the mixture into the pan in an even layer. Then simply distribute the swag evenly on top. Cover the whole sweet mess with the sweetened evaporated milk – don't miss the edges and corners and use the WHOLE CAN! Bake 25–30 minutes, until the milk in the corners and edges have caramelized and turned golden brown. These are best when they're thoroughly refrigerated, several hous at least. Patience, kids!
