MISO Ramen Vegan UZU style Limited to Tokyo
The soup is crafted from a broth extracted using Rausu kombu (kelp) and domestically sourced shiitake mushrooms, combined with oat milk that lends a subtle sweetness.
To this base, we blend several varieties of Japan's unique miso, enriched with white sesame paste to create a special miso sauce. The flavors are further elevated with the aromatic notes of ginger and garlic.
For toppings, we use a selection of umami-rich and colorful vegetables, such as tomatoes roasted to perfection in the oven to concentrate their flavor, and maitake mushrooms grilled to a delightful crispness. The finishing touch is a sprinkle of yuzu peel, adding a refreshing citrus aroma.
Our homemade medium-thick noodles are made with Hokkaido wheat as the base, complemented by pesticide-free whole grain flour from Aya Town, Miyazaki Prefecture, resulting in a rich flavor and a pleasantly chewy, smooth texture.
