Food historian extraordinaire send me some asafoetida root, and despite being double bagged still stinks to high heaven! Hahaha...!

I came across one of these when visiting a Mexican village.It's a traditional Mayan Pib - a method of cooking I'm writing about for some learning resources.Underground ovens traverse many cultures, but I've never created one myself.
Has anyone done this? I'd love to know.
