That condensation does NOT buffer intracellular osmolarity is somewhat obvious in experiments with giant vesicles #artificialcells. See e.g. pubs.acs.org/doi/full/10.... where changes in osmolarity outside a vesicle triggers condensation inside it, simply because the membrane is permeable to water.
