The house is still “fragrant” from frying that Bombay Duck, so I may make Balachaung (Ngapi Kyaw).

This iconic shrimp paste relish is potent and amazing!

Mix with hot rice or slap in a sandwich - both will soak up its lovely seasoned oil.

Ngapi Kyaw is particularly important to the Burmese diaspora.

It turns up in many a care package, as it keeps for ages and is very transportable.

It’s also a (pungent) reminder of home!

Let me tell you about #Balachaung.

If you’re familiar with Burmese food, you’ll know mohinga, our fish noodle soup, or lahpet thoke, our pickled tea salad.

But arguably more beloved and more essential to the Burmese palate is Balachaung, better known as ngapi kyaw in Burmese.

This time though, I was making the crispy onions and garlic for ngapi jaw aka balachaung (jaw).

This shrimp-based sambal/relish is funky, potent and amazing.

Eat with rice or even in a sandwich.
